Amidst the hustle and bustle of the market, I, the humble pork butcher, toil away, continuing a tradition as old as time itself. In the spirit of the 14th century ox, I bring home the bounty from the fields, offering exquisite flesh that nourishes and delights. My labor, reminiscent of the ploughman, provides sustenance for my community. Yet, unlike the ox, I give not just my strength but my very skin in the form of the finest pork products. From the miniature scenes of the 14th century, where cattle breeding and sacrifice intertwine, to the butcher shops of the 16th and 18th centuries, my craft has remained a constant presence. In the works of Joachim Beuckelaer, Tanger, and even in the pages of Le Vocabulaire Illustre, the pork butcher's role is etched in history. As the holiday season approaches, I prepare for the surge in demand, plucking turkeys and readying the finest cuts for the festive table. Yet, my work is not just a seasonal endeavor. Every day, I stand at the slaughterhouse, ensuring the highest standards of quality and care. In Berlin, my counterparts in the horse butcher's shop and the butcher's shop continue the tradition, honoring the cycle of life and death that sustains us all. Through the ages, from the voluptuous fool's whimsical depiction to the seriousness of the modern butcher, my role remains a vital part of our collective consciousness. So, as you savor the succulent pork dish, remember the laborer behind the counter, providing nourishment and tradition with every slice.
