Amidst the hustle and bustle of the market, I, the humble pork butcher, toil away, continuing a tradition as old as time itself. In the spirit of the 14th century ox, I bring home the bounty from the fields, offering exquisite flesh that nourishes and delights. My labor, reminiscent of the ploughman, provides sustenance for my community. Yet, unlike the ox, I give not just my strength but my very skin in the form of the finest pork products. From the miniature scenes of the 14th century, where cattle breeding and sacrifice intertwine, to the butcher shops of the 16th and 18th centuries, my craft has remained a constant presence.
