Cider-Making in Devonshire - Pound-House - the Mill and Press - Piling "The Mock", 1850. View showing the...rollers, between which the fruit is crushed...These rollers are worked by a large wheel driven by horses, and the ground apples are dropped into a trough under the shoot. The base of the press has a ledge with a mouth in the front, from which the expressed juice flows into a vessel placed underneath...As the liquor flows it is exceedingly sweet and luscious, and the new cider has a strong aperient effect when drunk. The pile of "mock, " of a square form, is made with alternate layers of reed or straw and crushed apples...When the pile is sufficiently high, the flat board over the heads of the figures is brought down upon it, and screwed tight by means of a long lever. The cider now flows freely... This process is repeated several times...until no more cider flows out of it'. From "Illustrated London News", 1850

EDITORS COMMENTS
Cider-Making in Devonshire: A Glimpse into the Past at Pound-House, 1850. This photograph, taken in Devonshire in 1850, offers a rare glimpse into the traditional cider-making process at Pound-House. The image showcases the mill and press, where apples were transformed into the region's renowned cider. The foreground of the photograph reveals the rollers, between which the fruit was crushed. These rollers were powered by a large wheel, which in turn was driven by horses. Apples were dropped into a trough under the shoot, where they were ground into a pulp. The resulting juice was then extracted using the press, which is visible at the back of the scene. The base of the press featured a ledge with a frontal opening, from which the expressed juice flowed into a vessel placed beneath. The sweet and luscious liquor that flowed from the press had a strong aperient effect when consumed. The pile of 'mock,' a square structure made with alternate layers of reed or straw and crushed apples, is visible in the background. When the pile was sufficiently high, a flat board was brought down upon it, and screwed tight using a long lever. The cider would then flow freely from the mock, and this process was repeated several times until no more cider emerged. This photograph, taken from the Illustrated London News in 1850, offers a fascinating insight into the traditional cider-making process in Devonshire during the mid-19th century. It is a testament to the rich agricultural heritage of the region and the ingenuity of its people.
