EDITORS COMMENTS
This print showcases a remarkable piece of 19th-century technology - the Dessicating machine. Developed to preserve fruit for export from France to the USA, this ingenious device consisted of two essential components: a furnace and a drying chamber. The furnace's purpose was to heat and dry air, which would then be circulated into the drying chamber containing fruit racks. Named Le Francais and designed by French inventor Tritschler from Limoges, this artwork from La Science Illustree magazine's 13th volume (first period of 1894) exemplifies the era's industrial advancements. With its intricate mechanical design, this historical illustration symbolizes both technological progress and food preservation techniques prevalent during that time. The image captures not only the essence of European innovation but also highlights the significance of high-temperature processes in preserving perishable goods. By using slow yet effective methods, such as dessication, dried fruits could endure long journeys without spoiling. This photograph is part of Science Photo Library's extensive collection featuring scientific discoveries throughout history. It serves as a testament to human ingenuity in harnessing technology for practical purposes like food science. As we admire this snapshot from over a century ago, we are reminded of how far we have come in our quest for efficient preservation methods while cherishing our rich cultural heritage.
