This print depicts the intricate machinery of an 18th century sugar refinery, as diagrammed by Edward Woollery Esquire of Jamaica. The elevation and plan illustrate the complex system designed to extract and refine sugarcane juice into its final crystallized form. The sugar mill, a vital component of Caribbean plantations during this era, was a testament to the ingenuity and resourcefulness of the time. The process began with the crushing of sugarcane in the mill, as seen in the lower right corner of the diagram. The cane was fed into the mill, where it was crushed between heavy rollers, releasing its juice. The juice was then transported through a series of channels to the boiling house, where it was heated and clarified. Impurities were removed through a filtration process, and the resulting syrup was cooled and crystallized. The crystals were then separated from the liquid through centrifugation, as shown in the upper left corner of the diagram. The machinery in the print includes various components such as boilers, evaporators, centrifuges, and pumps, all working in harmony to produce the desired end product.
